Ingredients (serving 6 portions):
Vegetables e.g. asparagus, red pepper (or cherry tomatoes) and red onions
¼ cup of milk
Blue cheese e.g. Blue Stilton
Preheat oven to 175 degrees Celsius.
Spray 6 muffin cups with oil.
Gently heat olive oil in a pan; cook and stir the vegetables until softened for 5 minutes.
Whisk eggs, milk, salt, and mixed pepper together in a bowl.
Mix cooked vegetables and blue cheese into egg mixture. Pour the mixture into the muffin cup (fill it up ¾).
Bake in the preheated oven for approximately 20 minutes until the muffins are set in the middle and lightly browned.
Serve and garnish with basil, pepper and a dash of balsamic vinegar.
