Seafood filo pie (torta rustica pugliese)

A savoury fish pie. Ideal as a sharing platter starter for a dinner party. A Salento-inspired recipe.

Ingredients:

2 filo pastry sheets

Smoked salmon

Prawns

Soft cheese e.g. Philadelphia Light

1 tomato

Capers

Method:

Preheat the oven to 190°C (170°C for fan assisted ovens).

On a flat roasting pan place a sheet of kitchen paper and a sheet a filo pastry. Spread the soft cheese and then add the other ingredients, spreading them evenly.

Use another filo pastry to cover the filling. Sprinkle with poppy seeds if desired.

Bake for 20 minutes or until pastry is crisp and golden brown. Serve hot, allowing the pie to stand for a few minutes.
